Tomato Salad

I made this as a side dish and I could have just used a fork and eaten it right out of the bowl. The kids didn’t love it, Riley(5) only ate the olives and tomatoes, and Alex (6) only ate the tomatoes. But this will be something I will make again for sure!! I think it would also be good with some fresh spinach or cucumbers added, too!


* 1pint of cherry tomatoes, halved
* 1/2 cup sliced green olives
* 1/2 cup black olives, drained and sliced
* 1/2 onion, diced
* 3 ounces pine nuts
* 1/4 cup olive oil
* 3 tablespoons red wine vinegar
* drizzle of honey
* 1 teaspoon dried oregano
* salt and pepper to taste


In a bowl, combine cherry tomatoes, green olives, back olives, and onion. In a dry skillet, toast pine nuts over medium heat until golden brown, turning frequently. Stir into tomato mixture. In a small bowl, mix together olive oil, red wine vinegar, honey, and oregano. Season to taste with salt and pepper. Pour over salad, and gently stir to coat. Chill for 1 hour.
