Beets and Beet Greens!

My wonderful neighbor, Mike, brought over some freshly picked beets.  I’ve never really been a big fan (other than beet chips, yum!), but I’ve heard that the greens are really good.  So, I decided to give them a try tonight!  and WOW! I’m so glad I did!  Both the beets and the greens are amazing!

All you need is:

  • bunch of beets with greens
  •  3-4 slices of bacon
  • small onion
  • black pepper.

Here’s what I did:

  • Wash the beets and greens really well!
  • Cut beets off greens (leaving a couple inches of stem)
  • Boil beets in water with lid on until tender (~30 min)
  • Once tender, drain and rinse with cool water
  • When cool enough to handle, the skins pop right off! Then slice and place in bowl.
  • Cut off tough stems from greens, roughly chop greens
  • Saute 3-4 pieces of bacon(diced) in skillet until brown
  • Add small chopped onion and saute for 3 min
  • Add greens and cook until tender about 3 minutes
  • Add greens mix to beets in bowl and toss together
  • Top with black pepper
  • Enjoy!

**warning** don’t be surprised when your urine turns pink from eating these! 🙂
