Coconut Mint Dark Chocolate Ice Cream

I found this recipe last night and we made it, ate it all, and I’m making some more today!  It is amazing… and just in time for summer!


  • 1 can coconut milk
  • 1/4 cup honey
  • 2 egg yolks
  • 2 oz 72% chocolate (I used Godiva, 72% with almonds)
  • 1 tsp peppermint extract

Put coconut milk and honey in small sauce pan over low heat and whisk until blended.  Add peppermint extract, whisk.  Whisk 2 egg yolks in separate bowl.  Temper the yolks by adding some of the warm milk/honey mix to the eggs, whisking continuously (so you don’t cook the eggs), add some more warm milk/honey mix to egg yolks, then pour yolks into pan and whisk all together.  Refrigerate until cold.  Put into your electric ice cream maker and follow the directions for your maker.  Mine takes about 20 minutes, so after around 10 minutes I added the crumbled chocolate.  We think it’s best when eaten immediately because it tends to get really hard in the freezer.  Enjoy!

    I’ve had to implement a weekend-only dessert rule for myself. Otherwise, I would eat this and paleo pudding every night of the week (for every meal, actually). Way too delicious!!!

    BTW — we’ve found that this recipe actually doesn’t get very hard in the freezer (unlike some other ice creams we’ve made). Pretty easy to scoop out, even after being fully frozen for more than a day!

      Have you tried this recipe with something other than pepermint? Don wants me to try vanilla extract

        We’ve tried once. I did vanilla extract with some peaches in it. It wasn’t bad, but not nearly as good as the mint! I plan to experiment with some other flavors at some point!!

      I have made it twice now with just vanilla 1 tsp instead of the peppermint and we love it! You can taste a smooth coconut flavor more than the vanilla.
