Slow Cooker Pork Tenderloin Carnitas

  • 2 pork tenderloins (mine were ~2lbs ea)
  • 2 large onions diced
  • 2 cups diced tomatoes
  • 2 cups diced peppers (I used green, red, and orange)
  • 2 heaping tsp dried oregano
  • 2 heaping tsp cumin
  • 1 heaping tsp garlic powder
  • 1 heaping Tbsp chili powder

Mix all spices together in small bowl.  Put pork tenderloins (mine were still frozen) in slow cooker and cover with spice mixture.  Put onions and peppers on top of meat, then top with tomatoes.   Cook on low for at least 8 hours.  Shred meat with fork.  This is great on top of a bed of lettuce or along side some squash or slaw!  Also, it freezes well, so divide up leftovers into small containers… it’s great for a quick meal! 🙂  The whole family loved this meat… so tender and delicious!

    Eating a bowl of it right now as an early lunch! Put it on top of leftover Willy’s salad from yesterday.

    How long should I cook if the tenderloin isnt frozen?

      I always cook mine 6-8 hours weather it’s frozen or not! I think that this is one of those recipes that can cook for a long time in the crock pot without drying out.

    It doesn’t require any initial water or stock or anything like that? I’m going to try this out tomorrow !
